Ingredients
100g bulgur
30ml lemon juice
6 tbsp olive oil
150g prawns, peeled, cooked and diced
150g calamari, cooked and diced
150g mussels, cleaned, boiled, shelled and diced
150g octopus, cooked
3 tomatoes, deseeded and diced
50g spring onions, chopped
1 bunch of mint and flat parsley, chopped
salt and pepper, to taste
lettuce leaves, for garnishing
Preparation
1. Soak bulgur in 250ml tepid water for 10 minutes. Using
a fork, stir bulgur gently and mix in lemon juice and olive oil. Refrigerate until cool.
2. Remove bulgur from refrigerator and mix in all remaining ingredients. Garnish with lettuce leaves and either serve immediately or cold.
