Ingredients
50 gms marku bread*
15 gms mayonnaise
15 gms mashed potato
Arabic pickle, to serve
For the filling:
150 gms boneless chicken leg,shredded
20 ml lemon juice
10 gms garlic paste
20 ml olive oil
2 gms each, cloves, cardamoms and fennel seeds
10 gms yoghurt
2 gms black pepper
10 gms salt
1 gm gum arabic (Moroccan mistaka)
Preparation
Mix chicken with all the ingredients for the filling and refrigerate for 12 hours. Heat a flat grill and cook marinated chicken until well done.
Lay out marku bread on a flat surface and spoon a portion of mayonnaise, mashed potato and grilled chicken on top.
Roll and grill again until golden brown and heated through. Cut into slices and serve with pickle.
** Marku bread is available in all major hypermarkets.Alternatively, one may opt for soft Saj bread or any other Arabic bread of their liking.
