Ingredients
1.2 kg: fresh shrimps, deveined and cleaned
200g: oranges, peeled, segmented and juiced
10g: dill, chopped
150ml: olive oil
200g: fennel, thinly sliced
250g: rocket salad leaves
250g: frisée salad leaves
50g: lemons, juiced
salt and pepper
Preparation
1. Boil shrimps in salted boiling water for 5-8 minutes, depending on their size. Then peel and set aside to cool.
2. Mix together orange segments and juice, salt, pepper, dill (reserve some for garnish) and 50ml olive oil. Marinate shrimps in this mixture for 15-20 minutes.
3. When ready to serve, mix remaining ingredients and stir in shrimps along with their marinade. Adjust seasoning, if required. Garnish with reserved dill and serve immediately.
