Add a dose of goodness to your diet with this crisp cos and celery salad. This is a FODMAP friendly recipe for a Low FODMAP diet.
Ingredients (serves 10)
1 cos lettuce, roughly torn
5 sticks celery, sliced diagonally
1 cup pecan nuts, toasted, chopped
Lemon dressing
1/3 cup olive oil
1/4 cup lemon juice
1 1/2 teaspoons brown sugar
Method
Make dressing: Combine ingredients in a screw-top jar. Season with salt and pepper. Secure lid. Shake to combine.
Combine lettuce, celery and half the nuts in a large bowl. Add dressing. Toss to combine. Serve sprinkled with remaining nuts. From/foodideas
