This year new trends of health and wellness -- game meat, local and organic food -- are prominent in luxury hotels worldwide, U.S. experts say. A Hawkins International report said top hotels around the world are kicking it up a notch to offer healthier options. For example, the grass-fed beef and local poultry trend is out, but local wild game dishes are in. Hotels worldwide are incorporating wild game from their native regions. In general, wild game is leaner than domesticated animals, has about one-third fewer calories and quite a bit less saturated and total fat as well as lower levels of cholesterol. Enchantment Resort in Arizona serves dishes involving elk loin, veal and buffalo tenderloin, while Sawgrass Marriott Golf Resort & Spa serves alligator tail from local Cypress Creek Farms. Hotel Madeline Telluride in Colorado features wild game in traditional dishes, from duck lettuce wraps to Colorado buffalo-burgers. Spas around the world are now adding local and organic elements into their treatments for a fresh spin on pampering. Jumby Bay, A Rosewood Resort in Antigua, Hotel Caesar Augustus in Capri and the Omni Mount Washington Resort in New Hampshire have their own spa gardens as well as kitchen gardens. Luxury hotels are capitalizing on the strength of scent memory by partnering with local scent companies to choose unique aromas that embody the spirit of the hotel. The Marti Istanbul Hotel partnered with a local scent for a unique "White Tea" scent that provides a calming fragrance for the hotel, the report said.
